WHere is an easy version of a drink from the seasonal drinks list. It's a batch prepared mix that is loaded with the flavours of a holiday season, which makes it excellent for your celebration. Any leftover cordial to use in brunch beverages, sweets, or to mix additional servings of bikinis.
Bikini
Yields 10 servings
For the Clementine Syrup (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar
For the Cocktail (produces 850ml, enough for 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish
Method
For the Cordial: Place all the items inside a pot, bring to a simmer, agitating to dissolve. Then, take off the stove allowing it to cool entirely. Pour into a sterilised bottle, close it and store chilled, it can be stored for about four weeks.
To make Batch Mix: Pour the specified spirits and syrup into one large bottle, let it rest for an hour, then pass it through best through a fine cloth, to ensure it's completely strained.
To serve: Add 85ml of the batch mix into a cocktail shaker packed with ice, and stir gently for about 60 seconds to chill. Strain into a cold coupe glass or a similar vessel, top with a few cranberries adding the final touch with a brief mist of the essential oil over the drink.
